Lentil Taco "Meat"

This is a really nice savory taco filling. The lentils give you the crumbly texture of a season ground beef. It goes great with all traditional Mexican fixings, salsas, or sides. This is a great Instant Pot recipe because you just dump the ingredients and let it rip.

A corn tortilla frying in a cast iron pan, topped with melted Chihuahua cheese and lentil taco meat filling.

Ingredients

  • 1 15oz Can Fire-roasted Diced Tomatoes
  • 1 15oz Can Black Beans
  • 15 Oz Water
  • 1 Cup Quinoa
  • 2 Cup Brown or Green Lentils
  • 1 Red Onion
  • 2 Limes
  • 1 Tbsp Cumin
  • 1 Tbsp Smoked Paprika
  • 1 Tbsp Cumin
  • 1 or 2 Tsp Chili Powder, to taste
  • 1 Tsp Tajin Seasoning
  • 1 Tsp Garlic Powder
  • 1 Tsp Salt
  • 1 Tsp Black Pepper

Directions

  1. Set the instant pot to manual and give it 20 minutes.
